I am ironically maintaining the small amount of weight I lost. Yay! Me!
I must say I am much happier being able to eat breakfast/lunch/dinner and eat what I want
Mainly protein eggs and such for breakfast. Salads for lunch and protein/ veggie or salad for dinner
Tonight I ate Mac and cheese with the kids but I was ok with it. Can’t be ” perfect ” all the time
as the weather improves I hope to add my walking/ running back in.
That’s the update for now!!

Day 9

Published February 21, 2012 by casyfamily

So I have done 9 days of the HGC plan and I have lost 4lbs. Yay! Me
But I must be honest, after very careful thought- I am going to discontinue the plan. I found it very difficult. But that is not why I am going to stop. I really felt like crap. I was beyond hungry. The plan is a very low calorie diet ( VLCD)
And according to the literature hunger pains should subside soon after starting. However found myself starving and my body was telling me I needed to eat more. So I have decided I will continue with a modified version. More proteins/ veggies ( which I really hate) and watch my carb intake. So I will continue to blog.
Anyone who does and completes the HGC I commend them! ‘Cause it is NOT easy!

So far so good

Just a quick update…
Doing well.

I have stuck to the food plan and at times have found myself in moments of weakness but I have not caved :)

I will admit this is VERY hard. I honestly did not think it would be but it is

I am missing those carbs and starches but have managed to make some good food replacement choices!

To date is am just shy of 3 lbs lost :)

Tonight’s dinner was cabbage rolls:
( I made 6 not 2 for the whole family)
3.5 oz lean ground beef
1/2 Cup canned, diced tomatoes (make sure no added sugar)
1t Onion powder
1t Garlic powder
Shake of Johnny’s- I didn’t use this ????
Dash of Pepper
2 Large Cabbage leaves
1/2 cup chopped cabbage
Pre0heat oven to 450′
Cook beef with all spices until almost done. Add half the tomatoes and chopped cabbage cook down a bit until cabbage soft and most liquid is absorbed.
Half the mixture and put in the two cabbage leaves.
Wrap tucking the ends in as much as possible. (I cute the center end part of the cabbage out (the really thick part) makes it easier to wrap.
Place 1/8 of your remaining tomatoes in small baking dish, roll around so it covers bottom, add cabbage rolls, and top with remaining 1/8 cup tomatoes.
Bake covered for about 30 min until outer cabbage is tender.
2 Nice size rolls just 1 protein and 1 veggie
So yummy and easy! Can’t wait to eat those again!!!

New me!

Published February 12, 2012 by casyfamily

So I have decided that I have a wedding coming up at the end of March. I am going to really focus on ME! And changing my eating habits
I don’t eat ” bad” I just have a hard time eating consistent meals And I have an obsession with sugar and carbs. I don’t eat sweets much however
I do put a TON of sugar in my coffee & cereal. I have a weakness for cookies too!

I started running last summer and worked my way up to 4 miles. Albeit slowly but I can do it. I sadly have not run much since December. When the weather warns up I will start up again

However even with all the running I was doing I was having trouble loosing my ” pouch” or ” muffin top”
that’s such a dumb term
Anyhow I guess after have 3 kids ( and 3 C-sections) my muscles are having a tough time remembering to tone up! While I don’t ” look” overweight I certainly feel heavier than I want. At 4″7′ I would like to loose 10 lbs and weigh a bit over 100lbs. The number on the scale does not matter to me all that much. It’s really how I want to FEEL in my own skin

I have had several friends use the HGC food plan with great success. So I did my research and have decided to try this.

This food plan or ” diet” is a bit extreme. But I like the part about eating proteins, vegetables, salads. No sugars or starches which will be hard for me but I am ready to make changes and feel motivated to do so

Positive encouragement if you leave a comment please

I will try to post daily updates and pictures for this new journey…..

Sunday 2/12/12- day 2 of phase 1

Published February 5, 2012 by casyfamily

Like so many of us who like, ok love football. America’s pastime sport today in my house is GAME DAY!
Super bowl Sunday is an exciting day here. Mainly because our team is in it! Personally I am not a huge fan – ok I am not really a fan at all but my husband is so the game will be on and we will be cheering for our home team

In my last blog entry I mentioned that new site I LOVE; Pinterest
Well it is such a FABULOUS site I thought I would share some awesome game food recipes. There are a ton on the site but these are a few that caught my eye…. Happy Super Bowl Sunday. GO TEAM!
Cheddar Bacon Dip (a.k.a Crack)
(Printable Recipe)
Add this recipe to ZipList!

16 oz sour cream
1 packet Ranch dressing mix
3 oz bacon bits (in the bag not jar)
1 cup shredded cheddar cheese

Mix together and refrigerate 24 hours. Serve with chips and/or veggies.

These are freezer friendly, in fact these MUST be frozen before you bake them or you will have one big cheesy mess in your oven! The good news is you can bread them all ahead of time then place them on tray with wax paper and freeze them until you are ready to bake. Make the marinara sauce a day ahead as well. Happy Superbowl Sunday!!

Skinny Baked Mozzarella Sticks

12 sticks part-skim, reduced sodium mozzarella string cheese (Sargento)
1 large egg, beaten
2 tbsp flour
5 tbsp Italian seasoned breadcrumbs
5 tbsp panko crumbs
2 tsp parmesan cheese
1 tbsp dried parsley
olive oil cooking spray (I used my misto)

Cut cheese in half to give you 24 pieces. Place cheese in the freezer until cheese is frozen.
In small bowl, whisk the egg. Place the flour on another small dish. In separate bowl, combine bread crumbs, panko, parmesan cheese and dried parsley
Dip the frozen sticks in flour, shaking off excess, then into the egg, then coat with the crumbs.
Repeat this process with the remaining cheese placing them on a tray with wax paper. Place cheese back into the freezer until ready to bake (this is a must or they will melt before the crumbs get golden).

When ready to bake preheat oven to 400° F. Line a baking sheet with aluminum foil and lightly spray with oil.
Place frozen cheese sticks on baking sheet. Spray the tops of the mozzarella sticks with a little more oil and bake in the bottom third of your oven until crisp, about 4 to 5 minutes. Turn and bake an additional 4 – 5 minutes watching them closely so they don’t melt.

Makes 24 pieces.

Melt milk chocolate
Dip bottom of strawberries in melted chocolate
Place on wax paper to dry
With white icing , pipe on the lines of a football

33 Days….

Published January 10, 2012 by casyfamily

33 Days.. thats how long ago I wrote my last post!

Christmas has come and gone along with New Years

J turned 6!! &

M started cruising furniture.. YAY!!! way to go

Actually Christmas was a blur— about 2 weeks before, J brought home the stomach flu which folloed by a cold and all family members sans ME got sick.

The girls got it over Christmas and sadly A was so sick we had to leave our family party early to take her home- the result was a raging ear infection.  Then M started with a fever on the 24th that lasted 7 days- Ear infection for her, antibiotics for both.. FINALLY we are 99% better

33 Days… I am not a good blogger :(

But to be 100% honest my life is not that exciting – its kinda boring and who wants to read about boring ?

in 2012 I will resolve to be a more consistent blogger….

Hope you will all still continue to follow me….
